Cobot that cuts, cores and peels avocados
Prep and portioning automation takes on repetitive back-of-house tasks such as placing ingredients into trays or containers at a steady pace. It is aimed at central production kitchens, commissaries and high-volume operations where a few repetitive tasks consume many labor hours.
Start by measuring the task: how many portions a shift produces, how many people do it today, and how much variation in portion size costs you. Then ask makers about accuracy, speed, how many ingredient types the robot can handle, changeover time and cleaning. Check whether the unit works on your existing conveyor or line layout and what floor space it needs. Ask about the pricing model, because some prep robots are offered as a subscription or robots-as-a-service, which shifts the cost from capital to operating budget. These systems fit K-12 central kitchens, hospital tray lines, airline and corporate commissaries, and contract feeders running large prepared-meal programs.
This category currently lists 3 systems: 2 commercially available and 1 in pilot or limited release. 1 has an NSF listing we could find, and 0 are guest-facing.
